Bracken
Butterbur Celery ... Zuki/Akazuki Bracken [ warabi Not only eating bracken but also picking up them is my pleasure. I feel around a sunny slope of a mountain village and find out bracken straighten oneself up. As generally they come up in a group, once we find out a braken, we can gather both handful them up. It is good bracken easy to snapped off. In spring, I went bracken gathering with my mother and sister. It is memorable, after we gathered a basketful of bracken, we eat rice balls with its fresh breezes. Preparations
  • Wash a bunch of bracken well, put into container in order, sprinkle 1 teaspoon sodium bicarbonate "myouban" over the bracken and pour fully boiling water (See picture).
  • Leave it alone until cold completely.
  • Keep water drop one by one from faucet, soak bracken in water overnight. The Japanese variety offers a softer skin, fewer seeds, firmer fresh, and crunchier texture.

The ash Wakame covered with ash became the talk of the BBS (Japanese version). We sometimes have it in my house, too. The ash is wonder. Though it is "cinders", but it's not refuse. To remove the bitter taste of bracken in spring, using the ash is the best. In this cold season, brazier is active in my living room. The straw ash in its brazier make me feel comfortably warm. After it burned out, it plays various part, so the ash is great. By the way, there is proverb I want to hand down to generation to generation. "The more the rich and the ashtray are accumulated, it becomes dirtier" So, we work hard, play hard and use hard. Previous words RECIPE INGREDIENTS ... Autumn dish

    Glamorgan Sausages
While normal sausages are made with meat, these are made mainly from grated cheese mixed with breadcrumbs, herbs and chopped leeks or onions. The recipe varies from place to place, and even from day to day, so they are sometimes quite spicy, and sometimes not. Use egg yolk to bind the mixture and roll into small sausages. The "skin" is made by rolling in flour, dipping in egg white and then rolling in breadcrumbs.
