So what's a Science Snack?
Since the museum opened in 1969, teachers from the San Francisco Bay Area have brought their classes on field trips to the Exploratorium. When we began putting this book together, we decided to do just the opposite: We wanted to take the exhibits to the kids. For three years, nearly one hundred teachers worked with staff members to create scaled-down versions of Exploratorium exhibits. The results were dozens of exciting "Snacks" - miniature science exhibits that teachers could make using common, inexpensive, easily available materials. By using Snacks in their classrooms, teachers can climb out of the textbooks and join their students in discovering science for themselves.

OUTDOOR DINING
by Melani Roewe Now that we have our bird friends' tables set, it's time to begin planning what you might like to munch on while hiking or camping outdoors. Even a few hours' walk can be enough to make your tummy grumble! Did you know that even the simplest foods taste extra yummy when eaten outdoors? That's right! Here are some very simple treats you can pack for your next hike, whether it's around the block or up and over the closest hill. Next time, I'll show you some easy, and really tasty, recipes for your camping meals. SUPER EASY: Apple Surprise Using an apple corer or a knife (have an adult help you with the knife) , cut out the inside of an apple. Remove the core and all apple seeds. Fill the apple with peanut butter or a mixture of peanut butter and raisins. MMM-good! Orange Sipper Using a knife or the tip of a potato peeler, poke a hole about one third of the way through an orange. Insert a plastic straw into the hole. When thirsty, suck the orange juice out of the orange. ( You may need to "massage" the orange)

Bugfood III: Insect Snacks from Around the World
By Lana Unger,
Extension Entomology Specialist
What is it about North American culture that keeps us from using one of our most abundant and readily available food sources, insects? We could learn a lot from our international neighbors. Many cultures around the globe have evolved to use insects in their diets. There was probably some trial and error involved because not all insects are edible. In fact, some insects are poisonous. But there are lots of insects that are safely eaten by people around the world.
Eating Insects in the Past...
Algeria - The natives of Algeria would collect large numbers of desert locusts to use as food. They were a valuable resource for the poor population. The locusts were cooked in salt water and dried in the sun. Not only were they collected for personal use, but the locusts were traded in the markets as well. Australia - Australian natives, known as Aborigines, have eaten many different insects throughout history. Hundreds of Aborigines would come together at the Bogong mountains to feast on Bogong moths. These moths would gather in large numbers on the cave floors and in rock crevices. They were harvested, cooked in sand and stirred in hot ashes. This would burn off the wings and legs. The moths were then sifted through a net to remove their heads before they were eaten by the Aborigines. Some of the moths were ground into paste and made into cakes.

    New Potatoes with Caviar

Baked new potatoes with caviar makes an elegant appetizer, but you could also serve it successfully as a side dish. Roasted Tomatillo Salsa
This salsa is delicious served with fajitas. Tomatillos are cute little peppers that look like green tomatoes. And how fun to toss them in the broiler for an intentional burning. I think this is the true reason roasted vegetables are so popular. Perhaps my sadistic side is showing. Pork-Filled Dijon Pepper Biscuits These tasty little pork tenderloin sandwiches are made from marinated pork slices stuffed between homemade biscuit layers. A real man pleaser. Smoked Salmon Rolls Purchase smoked salmon, chop and mix with capers, onions, mustard and herbs and roll in fresh endive leaves. Serve and impress.
