A New Ceviche Recipe Has Been Added to the Recipes! Culinary History of Peru Peruvian cuisine is one of the best in South America and it's known not only for its exquisite taste, but also for its variety and ability to incorporate the influence from different times and cultures. The Peruvian cuisine is an important expression of its own culture just as its ceramics, textiles, music and literature. Thanks to Peru's three regions and ocean there are an abundance of markets that can offer a variety of fresh ingredients that satisfy not only the housewife but also the most sophisticated chef. The culinary history of the Peruvian food dates back to the Incas and pre-Incas with its maize, potatoes and spices that later was influenced by the arrival of the Spanish colonies, and throughout the years it incorporated the demands of the different migrations and "mestizajes". Such groups included Chinese, European, African and Japanese immigrants. The Incas...

The Andes region expands through much of South America (including Columbia, Ecuador, Peru, Bolivia, and North of Chile), and therefore innumerous quantities of rhythms, musical styles and melodies each stemming from particular areas fit under the term: "traditional Andean music." The most familiar of these rhythms, styles or melodies are the: Huayno, Sikuri, San Juanito, Carnavalito, Trote, Saya, Tuntunas, Huaylas, Yaravi, Marinera, Cueca, Pandilla, Llamerada, Cuyahuada, Bailecito, Pasillo, San Juan, Albaso, Diablada, Tondero, Samba, etc. The instruments that the natives use (and/or the different materials with which they make them) are also particular to specific areas, and are directly related to the natural elements at hand for the making of the instruments. While in one area the back of a charango might be made with the carcass of an armadillo, in another it might be made with the shell of a tortoise; while in one area the sikus flute (pan flute) might be made from thin and long bamboo, producing a windy sound, in another area it might be made with thick and wide bamboo, producing a full sound, or, while in one area a dried gourd (the Guiro) might be used for percussion, in another a dried bean pod (the Vaina) might serve instead; etc. Following is a partial list of native and string instruments used in Andean music:

Culture
Art prior to Spanish colonization concentrated almost entirely upon the production of fine pottery, metalwork, stonecraft and textiles. The Spanish subsequently introduced their version of urban planning, with cities laid out in checkerboard fashion, and constructed mansions, churches and monasteries which slavishly mimicked Spanish renaissance or the rather phlegmatic Spanish early baroque. Over time, these European styles increasingly showed signs of a native Indian influence, leading to a style known as mestizo . (The best examples of mestizo architecture can be found in the churches around Puno and Arequipa.) Painting too mimicked European influences but as local artists grew more confident, a new and distinctive Cuzco style developed, in which artists turned their attention away from the visible world, and concentrated instead on fairytale and fable. The influence of these works on artist Paul Gauguin, who spent his childhood in Lima, is noticeable. Peruvian music is almost entirely folk music, while its literature encompasses everything from independence-inspired polemic to the anarchic individualism of its many poets and the boyhood reveries of the internationally renowned author Mario Vargas Llosa.

In about 1250 BC groups such as the Chavín, Chimú, Nazca, and Tiahuanaco migrated into the region from the north. The Chimú built the city of Chan Chan about AD 1000, ruins of which remain today. Culture The Native American heritage of Peru is one of the richest in South America. Although Spain gave Peru its language, religion, and rulers, the civilization of the Inca has left its traces throughout Peruvian culture.

quotes about history key testimonies featuring history A number of the narrators are knowledgeable about the region's history: they talk of Inca remains, Andean culture, the Spanish occupation, traditional farming and small-scale mining, the big haciendas - broken up in the agrarian reform - and the arrival of the big mining companies and the gringos who owned them, followed by a mass of workers from different parts of the country, and later nationalization of the industry. They also mention conflict with landowners and mining companies, war with Chile and the activities of Sendero Luminoso (Shining Path), the Maoist movement which fought a guerilla war against the government, particularly in the 1980's and early '90's. They have stories about the names of communities and key landmarks, such as lakes. One name which is often spoken with pride is that of Daniel Alcides Carrion, known as the father of Peruvian medicine. A teacher says, "Our community has a book that's been written and published by the historian Gallo in Cerro de Pasco about Daniel Alcides Carrion - he's from Quiulacocha… It's important that we know our history, our past... We've organised history and folklore courses and this has shown that some people know quite a lot about their pasts" (Peru 4)

From the Earliest Times to Inca Rule
Peru's earliest inhabitants can be traced to migrants reaching the North American continent from Asia. After crossing the Behring Strait and slowly pushing southward, some groups eventually settled along the coast and in the highlands and tropical forest regions of present-day Peru. The people of each of these areas witnessed the development of a variety of cultures over thousands of years. Highly developed communities flourished long before the rise of the Inca empire and left tangible signs of their presence. Their chronology extends from the year 8000 B.C. to 1532 A.D., when Peru was conquered by Francisco Pizarro. Remnants of Peru's early civilisations include the ruins of Chan Chan (from Mochica Jang-Jang = sun-sun), capital of the ancient Chimú Kingdom; the pottery and textiles of the Nazca culture, in whose territory lie the mysterious Nazca lines, which some believe may have served to direct incoming spacecraft, and which will perhaps one day be deciphered; the Paracas culture, whose textiles have retained their splendour intact after thousands of years; the Tiahuanaco culture, which flourished around Lake Titicaca over an area covering parts of modern Peru and Bolivia; and the highland Chavín, Chimú, Mochica, Labayeque and Moche cultures along Peru's northern coast, where the recent discovery of the "Lord of Sipán" funeral site has been described as the single most momentous archaeological find since Tutankhamun.
