    Why Eat It Many people eat sweet potatoes only on Thanksgiving, and that's a shame, since they're among the most nutritious of vegetables. Their bright color is a key to their high beta-carotene content, and they also contain the carotenoids lutein and zeaxanthin. Eaten with the skin, a baked sweet potato is an excellent fiber source (about half of which is soluble). And these naturally sweet treats supply substantial amounts of vitamins C and B6, and manganese, as well as a small amount of potassium. Varieties There are two basic types of sweet potato: Moist (orange-fleshed) and dry (yellow-fleshed). The sweeter orange-fleshed sweet potato varieties dominate the U.S. market, but some people prefer the starchier yellow-fleshed types. The moist-fleshed potatoes are often called "yams," but this is a misnomer: The true yam (botanical family Dioscoreaceae ) is a large (up to 100 pounds) root vegetable grown in Africa and Asia and rarely seen in the western world. However, common usage has made the term "yams" acceptable when referring to sweet potatoes. Availability Sweet potatoeswhich are grown mainly in California, Louisiana, and New Jerseyare sold throughout the year, but are most abundant in the fall and early winter. Many stores feature sweet potatoes around Thanksgiving and Christmas.

    The Division of Pediatric Gastroenterolgoy and Nutrition evaluates and treats a wide variety of conditions in children from birth to young adults. Among the most common problems seen are related to long-term, recurrent abdominal pain and constipation related issues. A very common condition seen is the irritable bowel sydrome, also known as a spastic colon or nervous stomach. We also see a large number of children with gastroesophageal reflux (spitting up or vomiting). Other problems seen include children who are not gaining weight appropriately, have ulcer-related problems, or have bleeding from the gastrointestinal tract (either from the rectum or upper intestine and stomach). We also treat children with more chronic disorders of the intestinal tract or liver, and pancreas. We are fully equipped to perform a number of diagnostic procedures to help make a definitive diagnosis. These include state-of-the-art endoscopic equipment that lets us look into the esophagus, stomach, and upper small intestine, as well as visualizing the length of the large intestine. Samplings of the upper and lower gastrointestinal tract can be obtained during these procedures for microscopic evaluation. These procedures can be performed in an out-patient setting in our endoscopy suite within our office. Other tests that can be performed are testing to look for excessive amounts of acid reflux into the esophagus, tests that can determine the amount of calories required for growth, tests that can look for abnormalities in the motility of both the upper GI tract as well the lower GI tract, and biopsy of the liver.

    Costa Rica Mango fruit matures 4/5 months after flowering. In addition to the fruit color and softness, proper maturity can be ascertained by the snap of the stem after slight pulling. Harvesting fruit with a 4 inch or so stem in tact prevests leakage of milky, resinous sap. Fruit can be picked green and left to ripen at room temperature, usually a week. Harvested fruit should immediately be washed to remove any sap which will reduce the change of anthracnose. After ripening, fruit keeps at room temperature for one week, or refrigerated for 2 weeks. Diseases include scale and mildew which can cause early fruit drop and both are controllable with spraying.
