Spices have been adopted from both East and West. Finnish cuisine appeals to the eye and the taste buds and has something special for every month of the year.
The gastronomic peak of the summer is the start of the crayfish season on July 21.
T he Finns appreciate fine cuisine, but consume it in moderation. Gastronomic delights and healthy habits go hand in hand. This new millennium is expected to bring a renewed acceptance of epicureanism, the quest for gourmet experiences. A long with the new thinking, traditional foods such as sausage are still popular. But the sausage has changed: it is meatier and tastier than ever. The animal fat in sausage is replaced often with healthier vegetable fats, and enriched with ingredients that have beneficial health effects. One such additive is pine bark flour, produced in the context of a project supported by the EU. T I n recent years, with the flood of information, marketing, tourism and new ideas about healthy nutrition, the culinary symbols of Finland have changed. The Finns favour a light, healthy diet; they are careful about what they put in their mouths. Their motto is "eat well, feel good." In addition to their own traditional dishes, they eat "world food". Consumers are "omnivorous": they like to prepare everything from scratch, but will also settle for convenience foods on occasion. Lightness and a low sodium and fat content are as important qualities to many as is flavour. The demand for organically grown Finnish raw materials is on the rise.

It's a Swedish-type smorgasbord, but with a Finnish flavor. The traditional selection includes salted salmon or whitefish, and spiced and salted herring or Baltic herring with a choice of sauces. Finnish fish aspics are second to none and Finnish vendace, whitefish and burbot roe is on a par with caviar. The fish is eaten with hot boiled potatoes. Potatoes are a staple food, almost as important to the Finns as to the Irish. Fish can be prepared in a great variety of ways, one popular method being smoking. Salmon, whitefish, bream and Baltic herring can be cold or hot-smoked, grilled, baked in paper or over an open flame. The latest Finnish invention is a smoke-curing bag. Koskenkorva or Finlandia vodka schnapps goes well with Baltic herring, lamprey or other types of fish. For 'cheers', Finns say 'hei', 'kippis' or the Scandinavian 'skal'.
