They tend to be irregular in shape and skin color can vary from reddish to cream colored and are drier than other sweet potatoes and not as sweet. Do not refrigerate, rather store at 50 - 60 degrees F, in a dry, well ventilated area. Boniatos can be used as you would any other sweet potato. They are delicious baked or roasted. The flesh discolors rapidly when peeled, so put them in cold water right away. If you are boiling them, be sure they are completely covered with water for the same reason. In May, Joe Froese travelled to Cuba with a trade unionist tour. He was determined to demonstrate to the Cubans that solar cooking could go a long way toward relieving the energy shortages caused by the U.S. embargo and the collapse of Cuba's traditional Eastern European trading partners. SBJ: First of all, tell us an anecdote from your trip JF: The trade union tour I was with was meeting with Pedro Ross, the General Secretary of the Cuban Workers Center (CTC). During the question and answer period I asked him about solar cookers. After the talk I invited him to a solar cooked dinner. When I told him that this cooker could cook all the food of Cuba as long as the sun is shining and that it costs about $30 US, he really pricked up his ears. He broke off his schedule and came for the dinner the next day. He brought along Leonel Gonzales, the president of the Inventors Association of Cuba and the governor of a province in Cuba. My message to them was that energy control is the issue here. So much of the power in the world is in the hands of those that control the energy. That's why I have been working with solar cooking for so long. This is people's power.

As for guilt-free reveling in carnivorous gustatory pursuits, I'm screwed. About three years ago I read and was convinced by the ethical arguments about meat-eating, primarily Peter Singer's. I eat accordingly. But I am a weak, weak man. Which means I occasionally falter, about once a month. Sometimes I feel guilty about this, sometimes I do not it depends on whether the meat in question is, say, free-range chicken, or whether it's conventionally raised pork; whether it's the byproduct of very little or of a lot of unnecessary suffering, respectively. Being an almost-total vegetarian reduces the amount of avoidable suffering caused by my diet, so I try not to let the guilt go too long when I falter. Thirty years of meat eating makes an impression. Exploring the Culture of Little Havana A Learning Community Project (School of Education, the College of Arts and Science and Eaton Residential College, University of Miami) The New Cuban Cuisine The Cuban style of cooking is simple in concept but complex in flavor. Much Cuban food owes its heritage and tradition from Africa and neighboring, Caribbean cultures. However, there are two distinctive styles of cooking: "the classic" whose techniques and ingredients have been in use for a long time across the island, and "the new," labeled nuevo Cubano , which adds a variety of herbs and spices from other cuisine and emphasizes presentation. For example, the province of Oriente, in eastern Cuba, is well known for its contribution of spicier and more robust dishes to the cuisine of the island due to the influx of Haitian and Jamaican immigrants to the island beginning in the 1790's. In the states, Cubans, too, have opted to choose hot peppers, like blazing scotchbonnets and serranos, to prepare recipes such as black bean salsa. Cubans who arrived in the United States in the late 50's and 60's had to make some adaptations to their cooking. Many markets did not carry the vegetables, fruits or cuts of meat that they were accustomed to using in their island kitchens. Lard and olive oil, which are generally used in Cuban cooking, had to be replaced by other cooking oils. Lard was too difficult to find and olive oil was too expensive; a substitute had to be found. Cooks started using vegetable oil, which was readily available and affordable. Nowadays, safflower and canola oils have become more preferable because they are healthier. Many items are now also available in low-fat versions. The consumption of salt has too been cut back thanks to low- sodium products.

This first of its kind Brigade is jointly sponsored by the Federation of Cuban Women and Radical Women. Participants will have the rare opportunity to meet, talk with, and experience the joys and hardships of the Cuban people, especially the women and children. The island will host up to 60 feminists women and men who are committed to broadening the international solidarity movement, to defending the socialist gains made by the 1959 revolution, and to pressuring the U.S. to end its vicious blockade. Brigade Activities Brigadistas will spend ten days in Havana, meeting with women's organizations, government officials, and activists from the lesbian/gay, Afro-Cuban and Chinese-Cuban communities. Visits will be arranged to schools, day care centers, hospitals, housing projects and other sites of interest in the capital. Two days spent in nearby provinces will provide Brigadistas a view of conditions in the countryside and an opportunity to work alongside Cubans in the fields and factories. A highlight of the tour will be a two-day Solidarity Conference in Havana where Brigadistas, Cuban activists and community leaders will plan international actions to defend and support Cuba's right to build a socialist country.

  • 2 cups uncooked long grain rice
  • 2 cups water
  • 1 large onion thinly chopped
  • 2 cloves minced garlic
  • 2 Tbsp olive oil
  • 1/2 teasp oregano
  • 1/2 teasp cummin
  • 1 Bay leave
  • salt to taste
Directions: Drain black beans and combine liquid with water to make a total of 2 1/2 cups, set aside. Sautee onions in olive oil, add garlic, oregano and cummin and continue sauteeing for about 1 minute. In a 2 quart pot, combine rice, liquid and sauteed onions, add bay leave and salt to taste. Bring to boil. Reduce heat to low and cook for approximately 20 minutes or until rice is tender. Serve with your favorite green salad and french bread. Buen apetito! Serves: 4 to 6 Preparation time: 20 min.

Days were spent fishing for tarpon, bass, barracuda, and marlin. Nights were left to explore the treasures of places like Havana, Cienfuegos, and Trinidad. My favourite spot, though, was way off the beaten path in Cayo Las Bruhah, where I caught a grouper, four barracuda, and a needlefish - and I didn't get seasick! Both Leslie Rudd, dad, and Rosa Rodriguez, mom, are full-time working professionals in Miami, so they spend as much time with the kids at meals and in meal preparation as they can.
