At the turn of the century, Tampa became known as the "Cigar Capital of the World" as thousands of Italian, Spanish, Cuban and German immigrants flocked to work in the cigar factories of Don Vicente Martinez Ybor. Those same ethnic groups are still here and their traditional ways of eating and drinking are still part of Tampa’s everyday life. But, during those years of living and working next to each other, there’s been a lot of sharing of specialties. Spanish/Cuban cooking is usually spiced up with garlic, onions, olive oil, bay leaves and oregano. Traditional menu items include black bean soup, boliche (spicy sausage stuffed inside a beef roast), picadillo (seasoned ground beef hash with capers) and fried plantains (a yellow-green fruit similar to a banana). And for something sweet, the locals have always had a fascination with anything guava or Key lime.

    by Kitty Morse published in 1998 Chronicle Books ISBN 0-8118-1503-X “Cooking at the Kasbah” by Kitty Morse is a treat for the senses. Her cookbook makes you feel as though you are traveling through Morocco with her. Morse was born in Casablanca and came to the US to study for a graduate degree. She now divides her time between California and Morocco. The recipes can help you get the flavor of Morocco in your own kitchen. Morse provides recipes for some of the basic building blocks of this cuisine, including preserved lemons and aged butter. These are very easy to prepare and will give you an authentic flavor to your food. The book has wonderful full color photographs – of the food and of Morocco. It features 70 recipes, including everything from beverages to couscous to pastries to vegetables to tagine – Moroccan stew, Morocco’s most common dish.

While a Caribbean dish, in the form of coconut-encrusted shrimp or barbecued meats with jerk seasoning, shows up here and there on a menu, CoCo's Flamehouse is the first Louisville restaurant to offer an all-islands selection of dishes. The storefront once housed a Japanese restaurant, but it has been gutted to accommodate a large, not-very-inviting bar that dominates the space. Tables are scattered around it, some with attractive black-and-white tile tops. (But the staff needs to pay more attention to wiping these down. The cloudy front windows could use a good wash, too.) If you can get past the indifferent housekeeping, you'll sample some satisfying dishes.

    As a tribute to Bob Marley, my neighbors, Bob and Molly Delahouse put together a delicious hot sauce that can be used on everything from rice tospare ribs! Excellent, mon!
    1/2 c. chopped scallions
    4 tsp. allspice
    1 tsp. cinnamon
    4 jalapeno peppers ( Beware : the original recipe actually calls for habanero peppers) 1 chopped onion 5 garlic cloves 1 1/2 tbsp. lime juice
