You've probably never heard of moros y cristianos ropas viejas , or media-noche . Most Americans haven't—unless they live in Miami. The first (literally "Moors and Christians") pairs black beans with white rice; the second ("old clothes") combines braised shredded skirt steak and vegetables; while the third ("midnighter") is a grilled Cuban cold cut sandwich. These dishes are cornerstones of Cuban cooking and are turning up at such trendy nuevo latino restaurants around the country as New York's Calle Ocho and Miami's Yuca. Cubans have been a dominant force in Florida's culinary melting pot since the early 1800s, when Cuban cigar workers settled in Ybor City, today part of Tampa. Key West has always had a large Cuban population, thanks to its close proximity to Havana, which is only 90 miles away. Spanish is the first language for more than 70 percent of my hometown, Miami. But Cuba's culinary influences have spread far beyond the boundaries of Florida.

Actually, Cuban recipes share spices and techniques in common with Spanish cooking, not Mexican, with a little Caribbean thrown in for flair and flavor. In general, the ingredients in Cuban cooking are not exotic or difficult to find. Some specialty items may be found in Hispanic markets. Cuban bread, unfortunately, is not to be found outside Tampa or Miami. Much like the San Francisco sour dough bread, Cuban bread is imitated elsewhere, but never perfected. Italian bread or French bread are acceptable substitutions, but they are not the same. Fresh vegetables, meats, and herbs are a must. Spices may be dried, but everything else must be fresh. Instant rice should never be substituted for long grain white rice. The recipes found at my site are simple to prepare, everyday family style recipes that would be typically served in a Cuban-American home in Tampa or Miami. Both cities have extensive Cuban populations.

Herald Staff Writer Cuban culinary guru Nitza Villapol who taught generations of Cubans how to
cook and, in the last decades, how to cope with a ration book and acute food
shortages has died in Havana at age 74, Cuba's official press announced
Tuesday. The circumstances of her death were not reported. Villapol was known for her cookbook Cocina al minuto (Cooking to Order),
dubbed ``the bible of Cuban cuisine,'' and for her TV show of the same name. A
Cuban Julia Child of sorts, she also starred on radio cooking shows and wrote at
least two other books on Cuban cooking. In the 1950s, young brides took their cooking lessons from Villapol. Some of them
later fled to exile in South Florida with their worn copies of Villapol's Cocina al

With Cuba in the news more and more these days, the debut of this self-published bilingual cookbook by Cuban culinary arts instructor Josefina Alvarez couldn't be more timely. Alvarez includes all the well-known staples of the Caribbean island's national cuisine, everything from the ever-present sofrito (an aromatic vegetable mixture used to flavor many dishes) to arroz con pollo (chicken and rice in a pot), ropa vieja (shredded beef), and even cuba libres (rum and Coke). The first 11 chapters feature the Spanish versions of each recipe, and the second half of the book presents them in English. While the book is very simply produced, with no color pictures or fancy typefaces, its value is definitely in the authenticity of the food. Cuban food is not known for great diversity or overt spiciness, but the hearty peasant food is flavorful and satisfying. The chapter on appetizers didn't offer much to tempt me, but I found several recipes in the rice section that got me moving toward the kitchen. The Arroz con Pollo Cubano reminded me somewhat of the delicious version I've often enjoyed in the home of Puerto Rican friends, though I don't think their recipe includes either beer, wine, or saffron as this one does. Chicago Tribune, Sunday, April 27, 1997 "When Yuca first opened eight years ago in a posh setting in Coral Gables, it, too, was quite an experience. It seemed so different, so chic, so stylish compared to Miami's other Cuban restaurants.
Its name really seemed to stand for young, upwardly mobile Cubans, rather that what its namesake (yucca, as it actually is spelled) is: a starchy root vegetable boiled or baked and served with garlic and onion seasoning.
Since the beginning, the goal for the restaurant, says Cuban-born Efrain Vega, 45, was to take Cuban cooking and integrate it with California and French influences. The hope was also to bring more 'balance' to Cuban cooking and less filling, less starchy dishes.
Thus was born a vibrant strand of Nuevo Blue Sky Eats. Take yucca stuffed with a picadilo (beef stew) of wild mushrooms on a bed of sautéed spinach with beef and carrot vinaigrette ($19). A version of the traditional Zarzuela here ($31) is fresh fish, lobster, shrimp and fresh mussels in a rich black bean broth, resting on strips of sweet plantain pasta.

SOUTH BEACH Born in Cuba and coming to the United States at an early age, Efrain Veiga is a product of both societies, moving with ease between the two cultures. Today Efrain is president as well as a shareholder of YUCA Restaurant in South Beach's Lincoln Road.
The road to nationally and internationally acclaimed restaurateur was not the traditional one. During his college years at Georgetown University in Washington D.C. he found out that he enjoyed cooking for his colleagues and friends, and maybe because his Latin roots where hospitality is elevated to an art, he enjoyed entertaining guests, and dazzling them with simple but exquisitely prepared dishes.
After a brief tenure working for the United Nations, Efrain moved to Miami and soon after was named the chef of Justa Pasta, an Italian restaurant in Coral Gables which he helped establish. He started to make improvements to traditional recipes adapting them to the new tastes, climate and available ingredients.
The success and satisfaction he derived from this new-found merier convinced Efrain that his future was in the restaurant business and, in 1989, together with a couple of investors, he opened YUCA in Coral Gables, a cozy restaurant that seated eight people. The name stands for Young Upscale Cuban American and in this pun, one can truly appreciate the new concept that YUCA has brought to the restaurant business. For the first time in Florida, the main ingredients of the basic Cuban cooking were used with such skill and imagination that they were elevated to the status of haute cuisine.

What is the next best thing to visiting markets in foreign countries? A tour of Chicago's ethnic grocery stores. We have grocery stores for African, Caribbean, Vietnamese, Thai, Greek, Mexican, Latin American, Indian, Italian, Middle Eastern, Korean, Russian, European (and more) products. Chicago is a city of ethnic neighborhoods and the people place great emphasis on maintaining the food patterns of their culture of origin. Because of demand, global manufacturers of foods stuffs are responding with a resounding "YES." In the past five years, the number of old and new products has proliferated at a dizzying rate. For example, you only used to see Jamaican jerk sauces offered in culinary magazines as "send away for" items, now the shelves in the Jamaican markets are stocked end to end with varieties that keep you reading the ingredients for hours. Even the new labeling of ethnic food products is in itself a worth a tour. This burgeoning is seen across the board with every culture. When you visit Chicago, how can you access these markets? I lead tours to these grocery stores. Most people like to take a tour that exposes them to a mix of ethnicities from Jamaican to Cuban to S. E. Asian to Russian to Middle Eastern. In Chicago, this is easy to do because the market places tend to be fairly close to each other. On my tours we also do a lot of munching of snack foods that overflow the counters. We try to sample something from each country, be it a pastry, a savory, a sweet or an interesting drink. My tours are great for stocking up on hard to find ingredients or for buying unusual food gifts.
