Irish cooking is understandably afflicted with associations with Ireland, arguably one of the most beautiful and over-romanticized pieces of real estate on the planet. This causes many Irish cookbooks which we've seen in the US to become (a) pictures of beautiful landscapes gorgeous, but inedible, and casting no particular illumination on the food itself: (b) folios of lovely Irish-style calligraphy pretty enough, but typically hard to reproduce small enough to get in very many recipes: and (c) collections of misunderstood or mistranscribed "traditional" recipes which no one here has eaten for a very long time. These three factors taken together are something which, in our household, we refer to as "the leprechaun factor". Cookbooks with too high a Leprechaun Factor never make it out of the bookstore to our shelves (where at last count about 550 cookbooks of various kinds reside). The following is a list of some of the cookbooks that did make it home. We recommend them to you: the recipes work, and the writing in them is either enjoyable, or clear, and usually (thankfully) both. The vast majority of them are paperbacks.

On St. Patrick's day it was corned beef and cabbage, a big Colcannon, and maybe a glazed TeaCake for dessertthe mouth-watering smell of the corned beef, cooking in its spices and garlic, was just divineand the sandwiches the next day, made from the leftover roast, are fit for a King! I like to make an apple-barley pudding, and leave some for breakfast the next morning, eaten cold with cream poured over it. t has been said that the food of the British Isles does not have the richess of flavor and texture of, say, French or Italian cuisinebut you will find that these recipes have a richness all their own; they were created to be hearty and flavorful for a people whose growing season was limited by cold weather, and who needed dishes that would pull them through many a wintry night. Most of these are fairly simple, and *all* of them are well worth the effort. These are a few of my family favorites: everyone has there own version, of course, but I think you'll like these! Enjoy!! "Unfortunately, it seems the only time people think about Irish food is around St. Patrick's Day," says cookbook author Margaret Johnson. "Even then, they figure it's just corned beef and cabbage. In fact, corned beef is an American invention. The people in Ireland never eat it." That attitude and a desire to dig into her Irish American roots inspired Johnson to write four cookbooks on Irish cooking. Her latest, "The New Irish Table" (Chronicle Books, $24.95), was released a just a few weeks ago. The book showcases dishes that Johnson discovered at restaurants and pubs during her travels in Ireland. Of the 75 recipes in the book, most were inspired by traditional dishes and updated to reflect the culinary renaissance in Ireland. You will not find a recipe for corned beef and cabbage. Instead, you will find orange almond cake, colcannon made with potatoes and leeks, and lamb cutlets with honey, apricot and tarragon sauce.
