I agree with the author above but I do believe the recipes are superb and the author is quite a well-respected authority on Greek cooking in particular, as well as the Mediterranean as a whole. Her pepper referneces are not very detailed, it's true. I think professionals still speak to laymen as somewhat simpleminded and in this case, I am a professional. I do think the home cook will find these recipes quite executable and reliable, which is more than I can say for chefs as Batali that always leave a very pertinent ingredient and or step out of the recipe, so your final result will never be as good. This is despicably miserable and stingy. Miss Kremezi does not do that. Like most Greeks, she gives her all. A deserving James Beard Award winner (though not for this book).

I picked up this book on a whim (a cookbook weakness moment...you know what I mean if you love food and cooking).Sometimes single subject cookbooks can be risky--you'll find only one or two recipes that would blowyour skirt up, so to speak, but I've enjoyed many of the recipes I'veprepared from this book and those that I haven't are on my 'to do' list. The issue of 'hot'is alittle vague here.The author mentions 'chilepeppers' in many of the recipes but does not tell you the preferredvariety...hence the 3 star rating.As a 'foody', I particularly enjoyedthe historic references to the origins of dishes--I made a dish fromancient Byzantinum last night.It discusses the use and history of spicyfoods in the Mediterranean. This is not a food essay book--and, dependingon your view of those types of books could be good or bad (for me theirgreat if that's what I am expecting but if I want recipes--eeek!)This bookgives you a brief history of the dish followed by an easily understood andfollowed recipe plus sources for weird ingredients.By the way--not allthe recipes are killer hot--it depends on the pepper you use and yourdiscretion with the recipe chosen.In a search to break away for theordinary and incorporate healthier Mediterranean foods into diet take alook here. ... Hot & Spicy Recipes is a delightful addition to any cookbook collection. A compact, no-frills handbook (there are no photos), this little beauty is loaded with a variety of recipes sure to please fans of extremely spicy food. The recipes are short and simple and there is a detailed description of the different types of peppers used throughout the book, including a heat index that outlines how hot is hot. My only complaint is that the recipes don't tell you how many servings each one yields, so you have to do a bit of guesswork as to portion sizes. Also, the instructions can be a bit vague (example: "Bake bread." At what temperature? For how long?). But, if you can muddle your way around a kitchen, you will have no problem preparing these dishes. Most recipes include ingredients you already have in your cupboard, and you'll be pleasantly surprised at how a dash of something hot and spicy can breathe new life into some standard dishes. And the barbecue sauce recipes are to die for! All in all, this is a great little book that no pepper lover should be without, and at such a great price Hot & Spicy Recipes should be a welcome addition to any well-rounded collection. ... Want a book that is more of an adventure guide than a paint by numbers?

Give this a try, and be prepared to go hunting for exotic ingredients.(or not, he has included replacements and why you should try to find the original ingredients).

Has opened up vast culinary frontiers for me, and I am stuck out here is AZ.!
